Steak Tips and Gravy: A No-Fuss Crockpot Recipe with Stew Meat

Hey y'all, it's Elisa here with a Stew Meat recipe! Even with just Garrett and I at home, I find myself reaching for the crockpot over and over as a timesaver. It feels like if we're not calving, we're planting, or haying, or processing, and I am admittedly not the best at planning ahead or meal prepping. Crockpot meals are a great compromise for my Type-A heart and lack of time.
A Heartwarming Classic
Steak tips and gravy is a huge hit in our house, especially over rice or mashed potatoes. The combination of tender meat and rich gravy fills the house with the best smell ever and sticks around for a day or so even after. Another exciting thing— it's also budget-friendly. Even just a pound of stew meat can turn into a delicious meal for us. I've also used this recipe with a roast chopped into bite-sized pieces, and it worked just as well.

Ingredients You'll Need
Before getting started, let’s look at the ingredients you'll need for this mouthwatering dish. Stew meat is not only affordable; it also becomes incredibly tender and almost melts when cooked low and slow. About these seasonings— I measure with my heart, so if you're drawn to something, toss it in. Here's what I use:
1-2 pounds of stew meat
1 1.5 oz can of beef broth
1 onion, chopped
3 cloves of garlic, minced (or, toss in some jarred minced garlic)
1 packet Beef Stew seasoning (I love Kinder's)
1/2 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon smoked paprika
1-2 tablespoons Kinders Fajita glaze
1/2 teaspoon parsley flakes
1 tablespoon of flour or cornstarch mixed with 2 tablespoons of water (for thickening)
1/4 cup heavy cream
Preparation Steps
Prepare Your Ingredients
Start by thawing your stew meat. Honestly, if you want to toss it in frozen, it'll work, just cook it a little longer. Chop your onion and mince your garlic if you're going that route.
Combine Ingredients in the Crockpot
Once your meat is prepped, toss it in the crockpot. Add your chopped onions and minced garlic, then stir it around a little. Add all your seasonings (aside from the parsley and the flour mixture) one by one, tossing the stew meat around to be sure it's fully covered. Pour in your beef broth, but try not to wash off all your seasonings. Some should still stick to the beef.
Set Your Crockpot
Cover the crockpot and set it to low for 6-8 hours or high for 4-6 hours. The slow cooking method yields the best results, turning your stew meat into tender, flavorful bites. Careful— anyone who walks in your house during this time will want to stay for dinner.
Thicken the Gravy
You'll know the meat is ready when it falls apart as you press on it with a fork. After cooking, your gravy will likely be pretty thin. To thicken it, take your hot water and cornstarch mixture and pour it in while stirring. Add your 1/4 cup cream and let that simmer while you finish up. Add your parsley right before serving.

I make this meal probably more than I should, so I've tried about every carrier there is. Here are some of my favorites sides to spoon this over:
Mashed Potatoes

Cheese Tortellini (my personal favorite)
Alone with Toasted bread (for mopping up the gravy)
